Ingredients:

  • 1 lb organic carrots, peeled and cut into sticks
  • 2 tbsp organic honey
  • 1 tbsp olive oil
  • 1 tsp fresh thyme leaves (optional)
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together honey, olive oil, salt, and pepper.
  3. Toss the carrot sticks in the honey mixture until well coated.
  4. Spread the carrots in a single layer on the prepared baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, or until carrots are tender and caramelized. Stir halfway through to ensure even roasting.
  6. Garnish with fresh thyme leaves if desired, and serve warm.
