Ingredients:
- 1 lb organic carrots, peeled and cut into sticks
- 2 tbsp organic honey
- 1 tbsp olive oil
- 1 tsp fresh thyme leaves (optional)
- Salt and pepper to taste
Directions:
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together honey, olive oil, salt, and pepper.
- Toss the carrot sticks in the honey mixture until well coated.
- Spread the carrots in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until carrots are tender and caramelized. Stir halfway through to ensure even roasting.
- Garnish with fresh thyme leaves if desired, and serve warm.
